Made by Lyburn Cheesemakers in the New Forest. Matured for a minimum of 18 months. Like a vintage cheddar meets Parmesan. Lovely crystallised texture. Beautiful grated on pasta but equally as good on a cracker. Best before mid April 2022.
Made by Lyburn Cheesemakers in the New Forest exclusively for james's. Taken at 2/3 days old and matured for 2-3 months by James. A washed rind cheese with a pungent aroma. Strong meaty flavour with a nice salty background. Best before end March.

All this months cheeses are made using pasteurised milk and vegetarian rennet.
