Made for james’s by Lyburn Cheesemakers in the New Forest from milk produced on their own farm. Taken at 2-3 days old back to my washed rind maturing room in Child Okeford. Washed in a combination of cultures giving the cheese a complex pungent flavour and aroma. Best before mid June.
Dorset Brie. A lovely unctuous soft paste underneath a beautiful bloomy rind. Made by The Book and Bucket Cheese Co in Cranborne, Dorset using pasteurised local Dorset milk.

All this months cheeses are made using pasteurised milk and vegetarian rennet.
